Key lime recipes
First you have to decide how tart you want the pie to be.
Anywhere from 1/3 cup to 1/2 cup seems to work best for me.
Combine this with:,3 large egg yolksn1 can of sweetened condensed milk (14 oz)nzest of one lime,Thats about it for the filling.
This will give you enough for a standard 8 - 9 inch pie crust.
You have to make some adjustments to the quantity if you are using a spring form pan or a pan that is larger.
,Now for the crust.
Graham crackers is traditional.
I personally never understood people who add sugar to their graham cracker crust.
Theyre cookies and plenty sweet on their own.
I dont think they need extra sugar.
But then again, I dont like my desserts to be overly sweet.
,1 1/2 cups graham cracker crumbsn6 or 7 tbsp melted butter (use real butter)ndash of cinnamon (optional),Bake at 350 degrees F until slightly jiggly in the middle.
It should shake like Jell-O.
The pie will set further once it has cooled.
,This is a pretty traditional version of Key Lime Pie.
DO NOT ADD GREEN FOOD COLORING!,On occasion Ill add 1 tsp of mint extract.
I think this is absolutely delicious though it strays from tradition.
,Once ready to eat, whip up some fresh heavy whipping cream and add a dollop to your slice.
With the pies sweetness you dont need to add sugar to the whipped cream, but adding a little doesnt hurt.
