Marinade for tuna steaks sesame oil

I had this dish at a place called The American Bar in Key West, FL, USA.

,I wrote it down as they were serving it and I vowed to recreated it one day.

,Here we go:,4 u2013 8 oz.

Tuna Steaks, Sushi A Grade,Marinade2 Large Onions, Minced,1/2 cup Sugar,2 cup Soy Sauce 3 Tbs.

Sesame Oil,1/2 cup Vegetable Oil,Salt and Pepper to Taste,1 cup Rice Vinegar,Combine all ingredients and whisk to dissolve sugar.

,Prepare1 cup Sesame Seeds,1/2 cup Black Sesame Seeds,Marinate Tuna for at least 2 hours.

,Mix sesame seeds u2013 reserve 1/4 cup for garnish.

,Crust one side of the Tuna with sesame seeds.

,Pan sear to rare or medium rare.

,Glaze1/2 cup teriyaki sauce,2 tablespoons honey,1 teaspoons cornstarch mixed with 1 teaspoon water,1/2 teaspoon crushed chilies, juice of one orange,1 teaspoon orange zest,Salsa1 large mango, peeled, cut in 1/4-inch cube,1/4 cup red bell pepper, cut in 1/4-inch dice,1 1/2 tablespoons fresh basil, finely chopped,1 1/2 teaspoons red wine vinegar,2 teaspoons lime juice,1/2 teaspoon Sugar,1 jalapeno pepper, seeded and finely chopped, or to taste,In a medium bowl, combine all ingredients.

Mix well.

,Let stand at room temperature a half hour before serving or refrigerate up to 24 hours.

This does not hold up well and should be used within the 24 hours.

,ResultOK, this is a fairly available recipe.

It may not be simple, per se, but itu2019s accessible to many people and it turned out EXACTLY like it tasted in the restaurant.

,You need to make sure your pan is hot enough to sear the tuna through the sesame seeds.

Despite the fusion of Asian and Mexican tastes, it blends beautifully.

Having the hindsight, it would likely pair well with a sauvignon blanc like a Sancerre.

,I think I had it with a Stella Artois, which was fine.

,I remember how Johnny Depp so eloquently put his response to the perfect meal.

Itu2019s monetized, so I canu2019t paste the clip from YT.

You need to look for,u201cJohnny Depp in Shooting the Cook, Restoring the Balance Movie Clip from Once Upon a Time in Mexicou201dFun movie, but that line stuck with me since I saw it in the theater.

,Donu2019t worry, the chef at The American Bar survived the night.
